Santouka at Mitsuwa

Today is a chilly day, and what more could I ask for than a hot bowl of ramen? I wanted something quick and easy for lunch, without the usual long waiting lines. Santouka at Mitsuwa is usually a long line, but today’s lunch, when it opens right on 11.30am, it was a refreshing relief to not wait. Today I’ve ordered the Cha Shu Salt Ramen, a medium sized bowl with bamboo and black fungus strips, a slice of fishcake, spring onions and two slices of cha shu:

And as you stir to pick up the ramen noodles, you can see the noodles are not too thick, not too thin, and cooked just right:

The salt broth was light yet savory rich, yet not too thick like a tonkotsu broth, and the 2 slices of cha shu were well seasoned with enough pork fat, while the bamboo and black fungus strips add a nice crunch when slurping together with the ramen.
