Hi everyone, I just want to wish you a happy Lunar New Year! I know this year will be different for each of you; some of you may celebrate with or without family gatherings.
I celebrate my Chinese New Year solo this year due to social-distancing. No big family gatherings, feasts or ang baos (red envelopes filled with cash – no money from aunties and uncles this year D:).
As part of my own CNY celebration I made pineapple tarts from scratch:
These pineapple tarts are eaten in Singapore, Malaysia and some other parts of Southeast Asia. Taiwan has their own version of this called pineapple cakes.
The pineapple tarts I made above are not perfect. I squished them too hard with a fork to make the criss-cross section. However, they are absolutely delicious! Buttery, moist and crumbly melt-in-your-mouth pastry with a sticky and slightly sweet pineapple paste in the middle. Pineapple tarts always hit the spot for me during CNY.
