Healthy Banana Chocolate Chip Muffins

Delicious, healthy muffins without compromising on taste! As a martial artist I lead an active lifestyle. I bake these every week as my pre-workout snack. It gives me enough carbs, protein and sugar to get my workouts going. These muffins freeze well too. You can put it in the microwave or toaster oven right out of the freezer.

If you want to make it low fat just substitute 3 tbsp avocado oil with mashed bananas or no-sugar-added apple sauce. I’ve tried both substitutes but adding more mashed bananas just make the muffins more bonanos! (fyi, I don’t think bonanos is a word but I’m tryna emphasize on the more bananably taste). If you REALLY want to cut down on sugar, you can also leave out the brown sugar. I’ve tried the recipe before without the sugar and it just works as well (but I prefer a little sweetness in my life…)

Makes 12 muffins

Ingredients

2 ¼ cups Kodiak mix

2 tsp baking powder

2 tsp cinnamon powder

¼ tsp salt

Slightly less than ½ cup light brown sugar

6 tbsp avocado oil (or 3 tbsp avocado oil and 3 tbsp mashed bananas / no-sugar-added apple sauce)

1 egg

¼ cup milk or vanilla soy milk

½ tbsp vanilla extract

2 ripe medium bananas, mashed

⅓ cup or ½ cup semisweet chocolate chips

⅓ cup or ½ cup chopped walnuts

Directions

  1. Preheat oven 350 degrees Fahrenheit .
  2. Mix Kodiak mix, baking powder, cinnamon powder and salt in a bowl.
  3. In another bowl, mix light brown sugar, avocado oil, egg and milk until sugar dissolves. Add mashed bananas.
  4. Add wet mixture (step 3) to dry mixture (step 2) until just combined together.
  5. Fold semisweet chocolate chips and chopped walnuts.
  6. Place muffin liners in muffin tin. Add batter until it reaches ¾ level in each muffin liner.
  7. Bake 25 mins, cool in pan 5 mins and leave to cool on rack.
